Accuracy depends almost entirely on the image, not on the settings. Photograph straight-on rather than at an angle, fill the frame with the text, use even light with no shadow across the page, and make sure the text is genuinely in focus — a picture that looks acceptable on a phone screen is often too soft once it is examined character by character. Printed text in a common typeface reads very well; handwriting, decorative fonts, low-contrast text and photographs of screens read considerably worse.
Always read the output before you rely on it. The characters that get confused are predictable — 0 and O, 1 and l and I, 5 and S, rn and m — and they matter most in exactly the places people use OCR for: account numbers, reference codes and amounts. Treat the result as a draft that removes the typing, not as a verified copy.
